Microsoft has revealed new information regarding the rollout procedure of stable Edge builds. Starting with version 83, the company will use 'progressive rollouts' by performing gradual rollouts of major updates to Microsoft Edge Stable channel over a span of few days.

Microsoft needs to monitor the health of Edge updates closely, so by rolling out the updates over the course of several days, they can limit the impact of issues that might occur with the new update.
Starting with Microsoft Edge release 83, Progressive Rollouts will be enabled for all Windows 7, Windows 8 & 8.1, and Windows 10 versions of Microsoft Edge. The same change will eventually become live for Mac users.
Here is how it will work for consumers:
Each installation of Microsoft Edge is assigned an upgrade value. When we start rolling out incrementally, you'll see the update when the value on your device falls within the upgrade value range. As the rollout progresses (within a few days), all users will eventually get the update. Browser updates with critical security fixes will have a faster rollout cadence than updates that don't have critical security fixes. This is done to ensure prompt protection from vulnerabilities.
For Enterprise users, the change will affect Microsoft Intune. It will be set to use progressive rollouts. WSUS users will be not affected.

Microsoft Edge is now a Chromium-based browser with a number of exclusive features like Read Aloud and services tied to Microsoft instead of Google. The browser has already received a few updates, with support for ARM64 devices in Edge Stable 80. Also, Microsoft Edge is still supporting a number of aging Windows versions, including Windows 7, which has recently reached its end of support. For pre-release versions, Microsoft is currently using three channels to deliver updates to Edge Insiders. The Canary channel receives updates daily (except Saturday and Sunday), the Dev channel is getting updates weekly, and the Beta channel is updated every 6 weeks. Microsoft is going to support Edge Chromium on Windows 7, 8.1 and 10, alongside macOS, Linux (coming in the future) and mobile apps on iOS and Android. Windows 7 users will receive updates until July 15, 2021.

I could not force Edge 81 to 83 so I installed Edge 83 beta and via Control Panel uninstalled Edge 81. I still prefer Chrome Version 83.0.4103.61 (Official Build) beta (64-bit), but the race is getting closer….
You can go with MSI installers to get Edge 83 Stable right now.
Thanks for your potentially useful link. In my case I actually prefer the Edge beta version as I do not want to wait until Edge gets updated to its next stable version.
