Earlier this year, Microsoft brought to Edge Chromium one of previously available in Edge Legacy features called "Define." It allows you to find definitions for any word on a web page or PDF document. Initially, that feature was limited to PDF documents only. Now, it works on all web pages.

Word definition in Microsoft Edge pulls data from Bing. It shows a small window with a brief explanation of the word, plus some additional information, such as synonyms. Other operating systems, such as iOS and macOS, have built-in dictionaries that allow you to get definitions for any word in the operating system. Windows 10 does not offer a similar solution, but at least you can now define words in Microsoft Edge without third-party extensions.
"Define" is now available to a subset of Edge Insiders in the Canary channel. You can access this feature from the regular context menu and new mini menus that are now available on web pages. Both "Define" and new mini menus are part of Controlled Feature Rollout. That means not all users get new features even with the latest Microsoft Edge version install.
If you need the word definition feature for Microsoft Edge right now, you can use various third-party extensions from Chrome Web Store (Adict or Dictionary Anywhere) that often offer more customizing options. Still, for a casual user, the built-in Edge dictionary will provide more than enough information. Unfortunately, there is no information on when "Define" will be available to all users in Edge Canary or other channels.
